Philosophy

The Domain Jean – François Thurot cultivate today 8 hectares of vineyard on the most prestigious wine domains of Côte d’Or, established on the rich soils of Nuits-Saint-Georges, Vosne-Romanée, Meursault and Puligny Montrachet.

Always respectful of our vines, our lands and environment we give to our vineyards the same love and care without distinction, from a Nuits-Saint-Georges to a Richebourg or Montrachet.

Our growing methods remain quite traditional. The soils of certain prestigious plots of land are enriched with manure in a slow way: only 2 hectars a year.

This natural compost maintains a natural balance in the soil, keeping a certain degree of “poverty”, which forces our vines to give the best of themselves. The vineyards are never chemically herbicided, but constantly ploughed in a very traditional way. At the beginning of each Winter, our winegrowers perform a vast trimming that limits the potential quantity, giving way to the potential quality in a maximum maturity. In Spring, and only on our best plots of land, we use ploughing horses in order to oxigenate our soils. A leaf trimming followed by a “green harvest” precede the consecutive harvests around mid-september each year, without the use of herbicides or chemical insecticides.

We let grass and weeds grow naturally, regulated by alternated ploughings.

Certain plots of land are produced under the french organic label “AB” (Vins issus de raisins de l’Agriculture Biologique, FR-BIO-10 regulation).

The most prestigious appelations are produced bio-dynamically (explanation :Biodynamic agriculture is a method of organic farming that treats farms as unified and individual organisms .

It is also called the “homeopathic treatment of plants” respecting the different moon cycles.

This method is applied to our vineyards and to the work around them.)

We harvest our grapes manually when they reach maturity before entering them in the wine storehouse.

The harvest is then carefully sorted for the vast majority of the produced winemaking vat. Cold macerations

in close vats allow to extract the best of each grape for our most prestigious appelations.

The ageing process takes place in brand-new french oak barrels, long and cared about, followed by the bottling process without any filtration. This gives in the end great Burgundy wines, refined and precise, elegant and silky. Characterized by a long-keeping potential. Our wines may be tasted with pleasure in their youth after a brief passage in a carafe designed for great bottles.

Our wines possess a great longevity that requires patience and long waiting, specially in the best years. Dense, closed and structured, with a magnificent and exceptional concentration, they develop with time all their finesse, elegance and delicacy.
